Christmas Cake

Ingredients

  • 400g Loprofin Mix
  • 50g mixed peel
  • 250g mixed dried fruit
  • 75g glacé cherries, chopped
  • 150g soft margarine
  • 150g brown sugar
  • 2 tbsp ground mixed spice*
  • 200ml Sno-Pro
  • 2 tsp baking powder
  • 3 tsp Loprofin Egg Replacer
  • 1–2 tbsp jam of your choice, warmed
  • Ready to roll icing

Method

  1. Preheat the oven to 180°C.
  2. Mix the fruit, margarine, sugar, spice and Sno-Pro in a large saucepan and bring to the boil, stirring occasionally. Reduce heat and simmer for 2–3 minutes. Allow to cool.
  3. In a large bowl add the Loprofin Mix, baking powder and Loprofin Egg Replacer, and add to the mixed fruit and margarine. Beat well until thoroughly combined.
  4. Transfer the cake mixture to a greased and lined tin and bake in a preheated oven for approximately 1 hour 20 minutes, until firm to the touch and a skewer into the centre of the cake comes out clean.
  5. Leave to cool in the tin for 1 hour before transferring to a wire rack.
  6. Warm the jam in the microwave and brush all over the cake. Cover with ready to roll icing and decorate as desired.
