- 1kg sweet potatoes**, skin-on, cut into thick wedges
- 2 tbsp oil
- 1 sachet fajita spice mix*
1. Coat wedges in oil and season with fajita spice mix to taste.
2. Place on a baking tray and cook in a preheated oven for 30–40 minutes or until well browned and cooked.
3. Serve immediately.
