1 Exchange Energy Balls

A fast and nutritious snack - perfect for when you're out and about.

Ingredients

  • 25g oats
  • 20g peanut butter
  • 80g dates or prunes
  • 3 tbsp cooked Loprofin Rice
  • 2 tbsp freshly squeezed orange juice / water

Method

  1. In a food processor, blitz together the oats, peanut butter, dates or prunes and cooked Loprofin Rice until smooth.
  2. Gradually add the orange juice or water until the mix comes together (it should be relatively dry). If it's a little wet, add some more desiccated coconut.
  3. Roll out 10 evenly-sized balls.
  4. You can coat your balls in desiccated coconut or some oats or simply top with a Goji berry.
  5. Store leftovers in the fridge for up to 1 week.

These energy balls are handy for lunch boxes, sports bags or when travelling.
