Butternut Squash and Chickpea Salad

Ingredients

  • Handful rocket leaves
  • 25g chickpeas
  • 30g guacamole
  • 3 radishes, thinly sliced
  • Handful roasted butternut squash
  • Handful pomegranate seeds
  • Handful fresh pomegranate seeds

Method

  1. To assemble the salad, just mix all of the ingredients together.
  2. To make the dressing, simply mix the olive oil and balsamic vinegar together and drizzle over the salad.

 

Chef's Tip

This low protein salad is delicious served with low protein soup and Herby Low Protein Loaf or topped with Loprofin Herb Crackers for some added crunch.
