Savoury Crumpets

  • 300g Loprofin Mix
  • 1 sachet yeast, supplied with Loprofin Mix
  • ½ tsp salt
  • 200ml Sno-Pro
  • 200ml warm water
  • 1 sweet potato, cut into chunks
  • 2 red onions, sliced
  • 3 garlic cloves, sliced
  • 1 yellow pepper, cut into chunks
  • 1 tsp olive oil
  • Salt & pepper
  • 2 tsp salsa
  • 30g full-fat cream cheese
  • Fresh herbs, to garnish


  1. Mix the Loprofin Mix, yeast and salt in a large bowl and mix the Sno-Prowith the warm water in a jug. 
  2. Make a well in the centre of the dry ingredients and gradually mix in the liquid. Mix for 4-5 minutes to make a smooth dough. Leave the bowl, cover with cling film and allow to rise in a warm place for 30 minutes. 
  3. Preheat the oven to 200°C. 
  4. Coat the vegetables with olive oil and sprinkle with salt and pepper. Roast on a baking tray in the preheated oven for 25-30 minutes. 
  5. To cook the crumpets, heat a non-stick frying pan over a medium heat and drop circles of dough on to the pan. Cook for 3-4 minutes on each side.  
  6. Serve 2 crumpets (1 serving) with a spread of cream cheese and salsa and some roasted vegetables on the side. 
  7. Leftover crumpets can be stored in the fridge for up to 3 days or in the freezer for 3 months. Leftover vegetables should be stored in the fridge and consumed within 3 days.


Chef's Tip:

To make this dish exchange free, omit the cream cheese and enjoy with extra salsa.
