Thai Rice Salad

Ingredients

  • 300g Loprofin Rice , cooked
  • 50g red cabbage, thinly sliced
  • 50g beansprouts
  • 100g tender stem broccoli
  • 100g mangetout, thinly sliced
  • 50g baby corn
  • 1 carrot, grated
  • 50ml Thai dipping sauce
  • Handful of pomegranate seeds

Method

  1. Combine all of the ingredients together.
  2. Serve with a sprinkling of pomegranate seeds.
  3. Store leftovers in the fridge and consume within 2 days.

  

Serving Suggestion

To add fire to this salad, mix in a thinly sliced chilli, handful of fresh coriander or mint and lots of lime juice.
